Microwave Tomato Soup with Mini Herb Scones Recipe
15ml olive oil.
2 onions, chopped.
2 garlic cloves, crushed.
1 can tomato paste (65g).
2 cans chopped tomatoes (400g each).
1 can tomato purée (400g).
500ml vegetable stock.
5-10ml smoked paprika.
salt and freshly ground black pepper.
1000ml cake flour.
20ml baking powder.
pinch of salt.
handful of fresh basil, torn into pieces.
paprika for sprinkling on top.
Place the oil, onions and garlic into a glass microwave safe bowl.
Microwave for 5 minutes.
Remove the bowl from microwave.
Add the remaining ingredients, except for the salt and pepper.
Place the bowl back into the microwave and microwave for 5 minutes.
Remove the bowl from the microwave and season with salt and pepper.
In a bowl sift together the dry ingredients.
Add the basil.
In a separate bowl mix together the milk and oil.
Add the milk mixture to the dry ingredients mixture.
Mix until just blended.
Roll the dough into small balls.
Press into small microwave safe bowls.
Sprinkle with paprika.
Microwave for 2 minutes or until done.
