Cinnamon Jam Bars Recipe


250g margarine.
200ml sugar.
1 egg.
5ml vanilla essence.
2½ cups flour.
5ml baking powder.
5ml cinnamon.
½ cup smooth apricot jam.
1 cup coconut.
extra coconut.


Preheat the oven to 180°C.
Grease a swiss roll tin.
Cream the margarine and sugar using an electric beater.
Add the egg and vanilla essence, beat well.
Add sifted dry ingredients and mix to a soft dough.
Press two thirds of the dough into the base of the tin.
Spread the jam over evenly.
Add the coconut to the remaining dough and mix well.
Grate coarsely over the top of the jam.
Sprinkle a little cinnamon over.
Bake for 20-25 minutes until golden.
Cut into squares and allow to cool in the tin.
