Jam Puffs Recipe

INGREDIENTS

375ml flour.
pinch of salt.
12ml baking powder.
1 extra-large egg, whisked.
enough water to form a stiff batter, about 200ml.
6 slices white bread, crusts removed.
smooth strawberry jam.
enough oil for deep frying.

STEPS

In a bowl mix together the flour, salt and baking powder.
Add the egg and water.
Mix until it is a smooth batter.
Spread 3 slices of bread with a thick layer of strawberry jam.
Place the 3 remaining slices of bread on top.
Quarter each sandwich to make 12 triangles.
Dip each triangle in the batter.
Deep-fry until golden brown.
Drain on paper towelling.
Serve hot or cold with extra jam OR custard.
