INGREDIENTS
250g margarine.
4 cups flour.
1 teaspoon baking powder.
2 eggs.
¼ teaspoon salt.
1 cup castor sugar.
1 teaspoon vanilla essence.
DIRECTIONS
Preheat oven to 180°C.
In a bowl cream the butter and sugar.
Add the eggs one at a time, beating after each egg has been added.
Add vanilla essence, flour, salt and baking powder.
Knead well.
Roll out thinly on a lightly floured surface.
Cut out with cookie cutters.
Bake for about 10 minutes until light brown.
VARIATIONS:
The following can be added if desired:
– Grated lemon rind, OR
– Cherries, dates or raisins, OR
– 3 tablespoons coconut – reduce flour to 3½ cups, OR
– 2 tablespoons melted chocolate, OR
– 2 teaspoons instant coffee, OR
– 2 tablespoons chopped nuts.
