Malva Pudding Recipe
½ cup castor sugar.
2 tablespoons butter.
1 extra large egg.
2 tablespoons smooth apricot jam.
1½ cups cake flour.
1 cup milk.
1 teaspoon vinegar.
1 teaspoon bicarbonate of soda.
pinch of salt.
½ cup ultramel custard
½ cup butter
½ cup sugar
1 cup milk
Preheat oven to 180°C.
Butter a medium sized oven proof dish.
Cream the castor sugar and butter together.
Beat in the egg.
Stir in the apricot jam.
In a separate bowl sift the flour and salt together.
Add the flour mixture to the sugar mixture, alternating with the milk.
Mix the bicarbonate of soda and vinegar together in a cup and stir into the pudding mixture.
Pour the batter into the prepared oven proof dish.
Bake for 45 minutes.
In a saucepan melt all the ingredients for the sauce together over a medium heat.
Pour over the pudding as soon as it comes out of the oven.
