Lemon Jumbles Recipe


2 cups flour.
2 teaspoons baking powder.
¼ teasoon salt.
1 egg.
60g butter.
juice and grated rind of 1 lemon.
½ cup sugar.
¼ teaspoon lemon essence.
little milk.


Preheat oven to 180°C.
In a bowl cream the butter and sugar together very well.
Beat in the egg.
Add the grated lemon rind, lemon juice and lemon essence slowly.
Mix well.
Fold in the flour, baking powder and salt.
Mix into a firm dough.
Add a little milk if necessary.
On a lightly floured surface roll out the dough to ¼ inch (6mm) thick and cut with biscuit cutters.
Bake for about 10 minutes until pale brown.
