INGREDIENTS
1 can (410g) whole tomatoes.
375ml uncooked rice.
salt.
125ml mayonnaise.
30ml lemon juice.
15ml curry powder.
375ml ham, diced.
125ml spring onions.
125ml raisins.
DIRECTIONS
Drain the tomatoes but reserve the juice.
Chop the tomatoes finely.
Add enough water to the tomato juice to make up 500ml.
Place the rice in a saucepan and add the tomato juice mixture.
Add salt.
Cook until the rice is soft, adding more water if required.
Mix the tomatoes with the mayonnaise, lemon juice and curry powder.
Combine the rice, ham, spring onions and raisins.
Pour over the curry sauce and mix lightly.
Chill unitl needed.
