Cola Tart Recipe


1 packet orange jelly.
375ml pepsi cola.
100ml cold water.
200g tennis biscuits.
125ml whipped, sweet cream.
125ml boiling water.
125ml chopped dates.
125ml chopped cherries + extra for decorating.
125ml chopped nuts.


In a jug dissolve the jelly in the boiling water.
Add the pepsi and mix well.
In a saucepan boil the dates in the cold water until all the water is evaporated.
Mash the dates.
Pour the jelly cola mixture into a bowl.
Add the dates, cherries and nuts.
Mix and cool to nearly setting point.
In a dish (15x25x5cm) place layers of tennis biscuits and jelly cola mixture.
Put in the fridge and allow to set.
Decorate with cream and cherries.
