INGREDIENTS
3½ cups flour.
1¼ cups sugar.
2 eggs.
½ teaspoon bicarbonate of soda.
½ teaspoon baking powder.
1 cup coconut.
½ teaspoon salt.
250g butter.
METHOD
Preheat oven to 180°C.
In a bowl cream the butter and sugar well.
Beat in the eggs.
Add the coconut, flour, bicarbonate of soda, baking powder and salt.
Mix into a fairly stiff dough.
Shape with a biscuit maker (cookie presser).
Place cookies on a baking tray.
Bake for about 10 minutes.
