Cauliflower Salad Recipe
1 head cauliflower, broken into florets.
3 gherkins, sliced into rings.
2 medium-sized onions, finely chopped.
INGREDIENTS SALAD DRESSING
5ml mustard powder.
250g cream cheese.
Blanch the cauliflower in boiling water for 3 minutes.
Drain quickly and cool in ice-cold water.
In a bowl mix together the cauliflower, gherkins and onions.
DIRECTIONS SALAD DRESSING
In a saucepan whisk the eggs, mustard powder, sugar and salt together until well blended.
Heat slowly on the stove until the sauce comes to the boil and thickens.
Stir in the mayonnaise and the cream cheese.
Add the salad dressing to the salad ingredients and mix.
Chill until needed.
VARIATION: To add extra colour, use red onions instead of ordinary onions.
