Banana Cake and Frosting Recipe
1½ cups self raising flour.
2 ripe bananas, mashed.
5ml vanilla essence.
180ml icing sugar
15ml lemon juice
Preheat oven to 170°C.
Grease a 20cm cake tin.
Cream the butter and sugar together until light and fluffy.
Add the mashed banana and mix lightly.
Add the egg and mix in well.
Stir in flour.
Add milk and mix lightly.
Add vanilla essence and mix.
Pour into prepared cake tin and bake for 40 minutes, or until testing skewer comes out clean.
Turn out onto a wire rack and allow to cool.
Using an electric beater, beat butter, icing sugar and lemon juice until smooth and creamy.
Spread onto cooled cooked cake.
