Baby Marrow and Feta Salad With A Salad Dressing Recipe
400g baby marrows, thinly sliced.
140g fresh peas.
45ml mint leaves, shredded.
200g feta cheese, crumbled.
INGREDIENTS SALAD DRESSING
30ml olive oil.
1 clove garlic, finely chopped.
45ml white balsamic vinegar.
pinch white sugar.
salt and freshly ground black pepper.
On a serving platter arrange the rocket.
Top with the baby marrow slices, peas, mint and feta cheese.
Moisten the salad with the salad dressing.
DIRECTIONS SALAD DRESSING
Mix together the olive oil, garlic, vinegar and sugar.
Season to taste with salt and freshly ground black pepper.
SUGGESTIONS: – Make the salad dressing first and set aside.
– If you don’t like raw baby marrows, then fry them gently in a little butter and season with salt and freshly ground black pepper.
