Anzac Biscuits Recipe
137,5ml soft brown sugar.
250ml desiccated coconut.
15ml golden syrup.
5ml bicarbonate of soda.
Preheat oven to 180°C.
Sift the flour into a mixing bowl.
Add the sugar, coconut and oats.
In a saucepan on the stove melt the margarine and syrup.
Dissolve the bicarbonate of soda in 30ml water and stir into the saucepan.
Pour the mixture in the saucepan over the dry ingredients and stir quickly.
Grease a baking tray.
Place dessertspoons of the mixture onto the greased baking tray, allowing room for them to spread.
Bake for 12-15 minutes.
Remove from oven and leave to cool slightly.
Place on a wire rack and allow to cool completely.
