INGREDIENTS
250ml flour.
125ml ground almonds.
60ml white sugar.
2.5ml ground cinnamon.
pinch of salt.
100g soft butter.
1 extra large egg.
100g chocolate, melted.
hundreds and thousands.
METHOD
Preheat oven to 180°C.
Spray 2 large baking trays with non-stick spray.
In a large mixing bowl mix together the flour, ground almonds, sugar, cinnamon and salt.
Rub in the butter with your fingertips until the mixture resembles breadcrumbs.
Add the egg.
Mix to form a stiff dough.
Shape the dough into a ball.
Wrap in plastic wrap.
Place in fridge and chill for 1 hour.
On a floured surface roll out the dough to 5mm thick.
Cut out star shapes with a cookie cutter.
Place shapes on the baking trays.
Roll the remaining dough into small balls and place in the centre of each star.
Brush with the beaten egg.
Bake for 8-10 minutes or until done and begin to brown.
Cool slightly on the baking trays.
Place on wire racks and leave to cool completely.
Dip only the small balls in the melted chocolate.
Sprinkle with hundreds and thousands.
Leave to dry.
Store in an airtight container.
