Soya Curry Recipe


3 onions, chopped.
6 cardamom seeds.
1 piece of stick cinnamon.
15ml ground coriander.
30ml ground cumin.
15ml mild curry powder.
2ml turmeric.
pinch ground cloves.
5ml cayenne pepper.
2ml nutmeg.
1 packet (200g) savoury soya mince.
1 tomato, skinned and cut into pieces.
750ml water.
15ml paprika.
250ml plain yogurt.

In a large pan sauté the onion in oil until soft.
Add cardamom seeds and cinnamon and stir-fry for about 1 minute.
Add ground coriander, ground cumin, mild curry powder, turmeric, ground cloves, cayenne pepper and nutmeg.
Stir-fry lightly.
Add the tomato and mix.
Add the water and paprika.
Add the savoury soya mince and mix.
Reduce the heat and simmer until the soya mince is soft.
Stir in the yogurt.
Season to taste with salt and simmer until heated through.
Serve with rice.
