Pumpkin Fritters Recipe

INGREDIENTS

About 800g raw, peeled pumpkin cut into pieces.
pinch of salt.
1 egg, separated.
2 tablespoons sugar.
1 cup self-raising flour.
oil for frying.
cinnamon sugar (1 part cinnamon to 2 parts sugar).

STEPS

Steam the pumpkin until soft and cooked.
Mash very fine with a fork.
You need 2 cups fine, cooked pumpkin.
Sprinkle with pinch of salt.
In a bowl beat the egg yolk and sugar together well.
Mix into the mashed pumpkin.
Add the self-raising flour.
Mix well.
In a bowl beat the egg white stiff.
Fold into the mixture.
Preheat a little oil in a pan on the stove.
Fry spoonfuls over a medium heat.
Fry until golden brown and turn around.
The fritters must not fry too quickly as it will be brown but not cooked.
The fritters must also not be fried to slowly as it will soak up too much oil.
Remove from the pan and place on paper towelling.
Sprinkle with cinnamon sugar.
Serve immediately.
