Pumkin Fritters With Veggie Stir-fry Recipe

INGREDIENTS PUMKIN FRITTERS

2 cups cooked pumkin.
1 cup ricotta cheese, grated.
1 egg.
½ cup flour.
½ teaspoon salt.
oil.

INGREDIENTS STIR-FRY

1 tablespoon oil.
1 cup green beans.
2 cups sinach.
salt and pepper.
1 tablespoon lemon juice.

METHOD PUMKIN FRITTERS

In a bowl mash the cooked pumkin.
Stir in the grated cheese, egg, flour and salt.
Heat oil in a pan on the stove.
Drop spoonfuls of the mixture into the oil and fry for 2 minutes on each side.
Drain on paper towels.

METHOD STIR-FRY

Heat oil in a pan on the stove.
Add the beans and stir-fry.
Add the spinach, and stir-fry until wilted.
Season with salt, pepper and lemon juice.
Serve with the fritters and enjoy.
