INGREDIENTS
125g butter.
160ml castor sugar.
3 extra large eggs.
300ml flour.
100ml maizena.
10ml baking powder.
5ml grated lemon rind.
1 large can pear halves, drained.
30ml sugar.
5ml ground cinnamon.
INSTRUCTIONS
Preheat oven to 180°C.
Grease a large shallow dish, 30cm in diameter with margarine.
In a bowl cream the butter and castor sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
In a separate bowl sift the flour, maizena and baking powder together.
Fold the flour mixture into the butter mixture.
Add the lemon rind.
Turn the mixture into the prepared dish and spread evenly.
Arrange the pear halves on top.
Mix the sugar and cinnamon together and sprinkle over the pear halves.
Bake for 35-40 minutes or until golden brown on top and baked through.
Serve with custard.
