Oats and Fruit Squares Recipe


180ml flour.
3ml baking powder.
250ml oats.
180ml castor sugar.
60ml chopped dried pineapple OR pears OR apples OR apricots.
180ml sultanas OR seedless raisins.
15ml sesame seeds, toasted.
15ml sunflower seeds, toasted.
80g low-fat margarine.
60ml honey.
30ml water.
1 egg, lightly beaten.


Preheat oven to 180°C.
Grease a 18 x 28cm baking tray.
In a bowl mix together the flour, baking powder, oats, castor sugar, dried fruit, sultanas OR raisins, sesame seeds and sunflower seeds.
In a saucepan on the stove, melt together the butter, honey and water until well blended.
Add the beaten egg to the flour mixture.
Add the butter mixture.
Mix well.
Spoon mixture onto the baking tray, spreading evenly.
Bake for 35-40 minutes.
Remove from oven and leave to cool slightly.
Cut into squares.
