INGREDIENTS
4 lemons or enough lemons to give 250ml juice.
375ml sugar.
250ml water.
extra water or soda water.
ice cubes.
mint leaves, chopped.
INSTRUCTIONS
Wash the lemons.
Grate the rind from 1 lemon.
Squeeze the juice from the lemons to give 250ml.
Strain.
In a saucepan mix together the grated peel, sugar and 250ml water.
Place on the stove and heat slowly, stirring to dissolve the sugar.
Bring the mixture to the boil.
Reduce the heat and simmer for 5 minutes.
The sugar must be dissolved before the mixture boils.
Remove from heat and leave to cool.
Once cooled add the lemon juice.
Pour the syrup into a container and place in the fridge.
Stir the syrup and use 1 part to 2 parts of cold water or soda water.
Add ice cubes and mint.
Serve ice cold.
