Gingerbread Men Biscuits Recipe
2½ cups flour.
1 cup light soft brown sugar.
100g unsalted butter.
one egg, beaten.
1 teaspoon bicarbonate of soda.
1 teaspoon ground ginger.
½ teaspoon ground cinnamon.
½ teaspoon mixed spice.
4 tablespoons golden syrup.
Gingerbread man shaped cookie cutter.
small sweets or chocolate chips, to decorate.
Preheat oven to 180°C.
Grease a baking tray.
In a large bowl sift the flour, bicarbonate of soda, ginger, cinnamon and mixed spice together.
Cut the butter into pieces and rub it into the flour.
Add the sugar.
Add the beaten egg and syrup.
Mix into a dough.
Wrap dough in cling wrap and place in the fridge for 1 hour.
Roll out dough on a floured surface until about 5mm thick.
Press out the gingerbread men with the cookie cutter.
Place cut out gingerbread men onto the prepared baking tray.
Bake for 10-15 minutes, until golden brown and still slightly soft.
Remove from oven and leave on the baking tray for 10 minutes, before placing onto a cooling rack.
When the biscuits are completely cool, decorate with the icing and small sweets.
