INGREDIENTS
3 cups flour.
5ml salt.
5ml baking powder.
½ cup sugar.
1 cup icing sugar.
1 egg.
7,5ml butter.
INGREDIENTS FRUIT MINCE
30ml brown sugar.
30ml brandy.
1 granny smith apple, peeled, cored and coarsely grated.
½ cup raisins, coarsely chopped.
½ cup currants, coarsely chopped.
½ cup sultanas, coarsely chopped.
1/3 cup glazed cherries, coarsely chopped.
1/3 cup marmalade.
¼ teaspoon mixed spice.
METHOD FRUIT MINCE
In a bowl mix together the sugar, brandy, apple, raisins, currants,saltanas, cherries, marmalade and mixed spice.
Set aside, covered, stirring occasionally for 1-2 days.
METHOD DOUGH
In a bowl mix together all the dry ingredients.
Add the butter and knead into the mixture.
Add the egg.
Knead together until the mixture is soft.
Roll out the dough and cut into circles.
Spoon the fruit mince onto the circles of dough and fold over.
Bake at 180°C for 30 minutes or until golden brown.
Lightly dust with icing sugar and serve.
