INGREDIENTS
125ml raisins.
110g butter.
125ml golden syrup.
60ml soft brown sugar.
5ml bicarbonate of soda dissolved in 30ml hot water.
1 egg, whisked.
250ml cake flour.
2ml salt.
500ml oats.
250ml coconut.
125ml chopped glacé fruit.
60ml chopped nuts.
METHOD
Preheat oven to 180°C.
Grease a 45 x 25 cm baking sheet.
Soak raisins in water for half an hour before draining well.
In a pot melt the butter, golden syrup and brown sugar slowly until the sugar has dissolved.
Cool.
Stir in the bicarbonate of soda and the whisked egg.
Sift the cake flour and salt together and add to the cooled butter mixture.
Add the oats, coconut, raisins, glacé fruit, and nuts.
Mix.
Spoon the mixture into the greased baking sheet and spread evenly.
Bake for about 15 minutes or until golden brown.
Cool slightly.
Cut into squares and place the squares on a baking sheet.
Dry the cookies at 100°C until almost dry.
