Curried Fish Recipe

INGREDIENTS

600g fish fillets, cubed.
salt and pepper.
125ml maizena.
30ml oil.
2 onions, sliced.
30ml roasted curry powder.
15ml vinegar.
15ml apricot jam.
500ml fish stock.
4 poppadoms.
500ml cooked rice.

METHOD

Season the cubed fish with salt and pepper.
Roll the fish cubes in the maizena.
In a large frying pan heat the oil on the stove.
Add the fish and fry until crisp.
Remove the fish from the pan and place fish in a bowl.
Using the same pan fry the onions.
Add the curry powder, vinegar, apricot jam and fish stock.
Simmer for a few minutes.
Place the cubed fish back into the pan and simmer until done.
Serve with poppadoms and rice.
