INGREDIENTS
500ml self-raising flour.
1,2ml mixed spice or nutmeg.
1,2ml cinnamon.
10ml baking powder.
150ml bran flakes.
60ml soft brown sugar.
1 apple peeled, cored and grated.
125ml seedless raisins.
80ml oil.
2 eggs.
250ml milk.
handful of oats for sprinkling.
METHOD
Preheat oven to 180°C.
Place paper muffin cases into muffin tin.
Grease the paper muffin cases with some oil or spray with non-stick spray.
In a bowl sift together the flour, mixed spice or nutmeg, cinnamon and baking powder.
Stir in the bran flakes.
Stir in the brown sugar, grated apple and raisins with a fork.
In a jug beat together the oil, eggs and milk until smooth.
Add to the dry ingredients.
Stir with a fork until just mixed and still lumpy.
Fill each muffin cup three quarters full.
Sprinkle with a little oats.
Bake for 25 minutes or until a testing skewer or toothpick comes out clean.
Remove from oven.
Place on a wire rack and leave to cool.
