Beef Strips in Tomato Sauce Recipe

INGREDIENTS

500g macaroni.
20ml oil.
30ml oil.
500g beef strips.
BBQ salt and pepper to taste.
8 tomatoes, quartered.
10ml garlic, chopped.
5ml dried mixed herbs.
2 spring onions, sliced for garnish.

DIRECTIONS

Cook macaroni as per packet instructions.
Remove from stovetop and drain.
Place macaroni back into the pot.
Add 20ml oil and toss.
In a pan on the stove heat 30ml oil.
Add beef strips and fry until brown.
Add BBQ salt and pepper to taste.
Remove from heat.
In a blender pulse the tomatoes, garlic and mixed herbs until a chunky sauce.
Place sauce into a saucepan and simmer on stovetop for 20 minutes.
Remove from heat and pour over beef strips.
Simmer for another 5 minutes.
Remove from heat and pour over macaroni.
Garnish with spring onion.
Serve.

VARIATIONS: Add 2 peeled grated or thinly sliced carrots and 1 head broccoli, cut into florets. Place over beef strips when pouring sauce over.
Replace beef with chicken.
