Apricot Salad Recipe


200ml dried apricots.
1 chopped pineapple.
3 slices bananas.
25ml lemon juice.
½ cup seedless raisins.
175ml mayonnaise.


Place the aprictos in a small heat proof bowl.
Cover the apricots with boiling water and leave to soak for 2 hours.
Drain well.
In a bowl mix together the pineapple pieces and bananas lightly and sprinkle with the lemon juice.
Add the apricots and mayonnaise.
Mix well.
Sprinkle with raisins.
