INGREDIENTS
6 slices white bread.
smooth apricot jam.
a little milk.
*pancake batter.
enough oil for shallow frying.
cinnamon sugar. (2 parts sugar to 1 part cinnamon).
*Pancake batter: 375ml flour.
1 ml salt.
5ml baking powder.
500ml water.
1 extra-large egg.
7ml vinegar.
15ml oil.
*METHOD PANCAKE BATTER
In a bowl sift the flour, salt and baking powder together.
Sift 3 times.
Make a hollow in the centre.
Whisk together the water, egg, vinegar and oil.
Gradually add the water mixture to the flour mixture beating with a wooden spoon OR electric beater.
Leave the batter to rest for at least half an hour.
METHOD PANCAKE SANDWICHES
Spread 3 slices of bread with a thick layer of apricot jam.
Place the 3 remaining slices of bread on top.
Quarter each sandwich to make 12 triangles.
Quickly dip each triangle in a little milk and then dip into the pancake batter.
Fry in shallow oil in a frying pan on both sides until golden brown.
Sprinkle with cinnamon sugar while still hot.
Serve lukewarm.
