Fruit Salad Pudding Recipe

INGREDIENTS PUDDING

1 small tin fruit cocktail.
2 cups self-raising flour.
2 eggs, beaten.
10ml bicarbonate of soda.
1½ cups sugar.
pinch of salt.

INGREDIENTS SAUCE

1 cup sugar.
½ cup coconut.
5ml vanilla essence.
45ml butter.
½ cup ideal milk (or a very small tin).

METHOD PUDDING

Preheat oven to 180°C.
In a bowl mix the flour, sugar and salt together.
Add the fruit and juice.
Add the 2 beaten eggs.
Beat well.
Mix the bicarbonate of soda with a little water and add to the mixture.
Beat very well.
Pour into an ovenproof bowl.
Bake for 30 minutes.

METHOD SAUCE

In a saucepan on the stove, melt all the ingredients together.
Pour over the pudding, when the pudding is cooked.

Serve hot or cold.
Makes 1 large bowl or 2 medium bowls.
Best made in flat ovenproof bowls.
