Cream Sponge Cake Recipe

INGREDIENTS CAKE

1½ cups flour.
3 teaspoons baking powder.
½ teaspoon salt.
3 eggs.
1 cup castor sugar.
1 teaspoon vanilla essence.
3 tablespoons butter.
½ cup milk.
3 tablespoons water.

INGREDIENTS ICING

1½ cups icing sugar.
125g margarine.
1 egg.
1 teaspoon vanilla essence.

METHOD CAKE

Preheat oven to 210°C.
In a bowl sift together flour, salt and baking powder.
Separate eggs.
Beat egg whites until stiff.
Add egg yolks to the egg whites and beat well.
Gradually add castor sugar and beat.
Add vanilla essence and dry ingredients.
In a saucepan boil butter, milk and water.
Remove from stove and pour over mixture.
Beat well.
Pour mixture into a greased cake tin.
Bake in oven for 20 minutes.
Turn out onto cooling rack and allow to cool.
Decorate cake with the icing.

METHOD ICING

Mix all ingredients together until smooth.
