INGREDIENTS
1 tin corned beef, diced.
1 medium onion, chopped.
2 cloves garlic, chopped.
1 chilli, chopped (optional).
1 red pepper, diced.
1 tablespoon chopped chives.
50g butter.
3 potatoes peeled and grated.
salt and pepper to taste.
METHOD
Preheat oven to 120°C.
Grease a baking tray with oil.
In a pan on the stove melt the butter.
Add onion, garlic, chilli and red pepper.
Fry for about 1 minute.
Remove pan from heat and allow to cool.
Once the onion mixture has cooled add the diced corned beef, chives and grated potatoes.
Mix.
Place the mixture into the baking tray and cover with tin foil.
Bake for 1 hour or until golden brown.
Remove from oven and allow to cool.
Serve.
Place leftovers in the baking tray in the fridge.
Reheat in the oven.
