Butternut Fritters Recipe

INGREDIENTS

About 800g raw butternut, peeled and cut into pieces.
pinch of salt.
1 egg, separated.
2 tablespoons sugar.
1 cup self-raising flour.
oil for frying.
cinnamon sugar (1 part cinnamon to 2 parts sugar).

METHOD

Steam the butternut until soft and cooked.
Mash very fine with a fork.
You need 2 cups fine cooked butternut.
Sprinkle with pinch of salt.
In a bowl beat the egg yolk and sugar together well.
Mix into the mashed butternut.
Add the self-raising flour.
Mix well.
In a bowl beat the egg white stiff.
Fold into the mixture.
Preheat a little oil in a pan on the stove.
Fry spoonfuls over a medium heat.
Fry until golden brown and turn around.
The fritters must not fry too quickly as it will be brown but not cooked.
The fritters must also not be fried to slowly as it will soak up too much oil.
Remove from pan and place on papertowelling.
Sprinkle with cinnamon sugar.
Serve immediately.
