Banana Loaf Recipe
½ cup butter.
1 cup white sugar.
3 bananas, mashed.
2 extra large eggs.
2 cups cake flour.
2,5ml bicarbonate of soda.
2,5ml baking powder.
5ml vanilla essence.
Preheat oven to 180°C.
Butter a 10x20cm loaf tin (or spray with non-stick spray)
cream the butter and sugar together until light and fluffy.
Add the mashed banana and mix lightly.
Take 2 separate bowls.
In one bowl beat the milk and eggs together.
In the other bowl sift the dry ingredients together.
Add the egg mixture to the butter mixture, alternating with the dry ingredients.
Add the vanilla essence and turn the batter into the prepared loaf tin.
Bake for 1 hour or until golden brown and a testing skewer comes out clean.
