INGREDIENTS
2 eggs.
100g butter, melted.
250ml grated cheddar cheese.
2 tomatoes, skinned and coarsley chopped.
1 onion, chopped.
15ml parsley, chopped.
250ml flour.
10ml baking powder.
125-200ml milk.
salt and black pepper to taste.
1 can (320g) vienna sausages, sliced.
DIRECTIONS
Preheat oven to 180°C.
Grease a round ovenproof dish, about 20cm in diameter.
In a bowl whisk the eggs and butter together.
Add the cheese, tomatoes, onion and parsley.
Mix.
In a separate bowl sift the dry ingredients together.
Fold the dry ingredients into the mixture.
Add just enough milk to form a fairly slack batter.
Mix in the sausages and spoon into the prepared dish.
Bake for about 40 minutes or until the pie is firm and golden brown.
Serve with a salad.
