INGREDIENTS
125-250g bacon.
15ml chopped garlic.
4 cups cooked stiff mieliemeal porridge.
125ml mayonnaise.
1 can (185g) tuna packed in oil.
2 eggs, whisked.
paprika or cayenne pepper.
salt.
grated cheese for sprinkling on top.
METHOD
Preheat oven to 180°C.
Grease an ovenproof dish with margarine.
In a pan fry the bacon with the garlic until done but not crisp.
Set a few rashers aside and chop the rest.
Mix the bacon, garlic, mieliemeal porridge, mayonnaise, tuna with the oil and the whisked eggs together.
Season to taste with paprika or cayenne pepper and salt.
Turn into the prepared ovenproof dish and place the remaining bacon on top.
Sprinkle with a little grated cheese and a little paprika.
Bake for about 20 minutes or until the cheese has melted.
