INGREDIENTS
200g margarine.
515ml plain flour + extra for dusting.
5ml baking powder.
120ml castor sugar.
2 large egg yolks.
Icing sugar.
METHOD
Preheat the oven to 190°C.
Cut the margarine into small pieces.
In a large bowl sieve the flour and baking powder together.
Add the castor sugar, egg yolks and margarine.
Mix with a wooden spoon or handmixer until it forms a stiff dough. (Do not mix for too long!)
Wrap the dough in clingfilm and leave to rest and chill for 30 minutes in the fridge.
Dust the work surface with a little flour and roll out the dough until it is about 5mm thick.
Line baking tray with baking paper.
Cut out shapes with cookie cutters and place on baking paper.
Fold the dough scraps together, roll out and cut out more shapes.
Bake in the oven for 15 – 20 minutes until cooked and lightly browned.
Leave the cookies to cool on the baking tray.
Dust the cookies with icing sugar.
