Quick Spiced Muffins Recipe


4 cups cake flour.
25ml baking powder.
2ml salt.
15ml mixed spice.
5ml ground cinnamon.
200g margarine.
200ml soft brown sugar.
500ml dried fruit cake mix.
1 egg.
375ml milk.


Preheat oven to 190°C.
Grease the hollows of 2 muffin tins with margarine.
In a bowl sift the dry ingredients together.
Rub in the margarine until the mixture resembles breadcrumbs.
Add the brown sugar and dried fruit cake mix.
Whisk the egg and milk together.
Add to the mixture.
Mix lightly until just blended, the mixture must still be slightly lumpy.
Fill the muffin hollows two thirds of the way.
Bake for 20-25 minutes or until a testing skewer comes out clean when inserted into the centre of the muffins.
Cool slightly in the tins before turning out on a wire rack to cool completely.
Serve with margarine.
