Mini Doughnut Recipe

(Using an electric mini doughnut maker)

INGREDIENTS

1½ cups flour.
125g margarine or butter, soft.
½ cup castor sugar.
1½ teaspoons baking powder.
½ teaspoon salt.
¾ cup milk.
1 egg.

DIRECTIONS

In a bowl mix together the flour, castor sugar, baking powder and salt.
Add the butter, milk and egg.
Beat with an electric beater until a thick, smooth and creamy batter is formed.
Preheat doughnut maker for 5 minutes.(Optional: Spray the doughnut maker with non-stick cooking spray before preheating).
Spoon about 2 teaspoons of the batter evenly into each mould.
Close the lid.
Cook for 2 minutes, or until the doughnuts are a golden brown colour and soft to the touch.
Remove the doughnuts from the doughnut maker and place onto a cooling rack.

(If you do not have a doughnut maker you can also make the doughnuts in a doughnut tray in the oven and bake them at 180°C for 15 minutes)

Chocolate Glaze Icing

INGREDIENTS

1 cup icing sugar
1 teaspoon margarine or butter, soft
1 teaspoon vanilla essence
1 tablespoon hot water
2 teaspoons cocoa powder

DIRECTIONS

Mix ingredients together until smooth.
Dip doughnuts into icing.
Place on a plate and allow to set.

More Decorating Ideas:

– Brush the doughnuts with melted butter and sprinkle with cinnamon sugar.
– Melt chocolate (dark/white) in a microwaveable dish in the microwave.
Dip the doughnuts into the melted chocolate and decorate with 100’s and 1000’s, or any sprinkles of your choice.
