INGREDIENTS CRUST
1 packet tennis biscuits, finely crushed.
100g butter.
INGREDIENTS FILLING
1 tin condensed milk.
2 eggs, separated.
1 lemon.
STEPS CRUST
Preheat oven to 180°C.
Melt the butter.
Add the crushed tennis biscuits to the melted butter.
Mix.
Line a baking dish with the mixture.
STEPS FILLING
Finely grate the lemon rind.
Squeeze the juice from the lemon.
In a bowl stir together the lemon juice and condensed milk.
Add the finely grated lemon rind.
Add the egg yolks.
Beat.
Place the mixture into the crust.
In a bowl beat the egg whites until stiff.
Place on top of the filling.
Bake for 10 minutes.
