Frozen Fruit Salad Mould Recipe


1 packet lemon flavoured jelly.
1 cup hot water.
½ teaspoon salt.
1 cup milk.
½ cup whipped cream.
2½ cups fresh OR well-drained canned fruit, chopped.
lettuce leaves, shredded for decoration.


Dissolve the jelly in the hot water.
Stir in the salt.
Leave to cool slightly.
Add the milk.
Place in the fridge and leave to chill until the mixture starts to set.
Fold in the cream and fruit.
Pour into a 230mm x 120mm x 80mm dish.
Place in the freezer and leave to set.
Loosen the sides with a hot spatula and unmould on a platter.
Decorate with the shredded lettuce.
