Easter Bunny Biscuits Recipe
460ml plain flour.
137,5ml castor sugar.
1 medium egg yolk, beaten.
Preheat oven to 180°C.
Sift the flour into a bowl.
Add the margarine.
Using your fingers rub together into a fine breadcrumby mixture.
Stir in the castor sugar and beaten egg yolk.
Knead into a smooth dough with an electric beater.
Roll out the dough and cut out bunny shapes with cookie cutter (or using a sharp knife).
Place 2 silver balls on each bunny for their eyes.
Place bunnies on a greased baking tray and bake for 25 minutes until golden.
Sprinkle with castor sugar and leave to cool.
Once cooled take icing and give the bunnies a nose and a mouth.
TIP: You can use strips of cherry and currants for the mouths and noses.
(Place the cherry and currants on the bunnies before putting them in the oven).
