Coconut Jam Squares Recipe
2 beaten eggs.
1 cup sugar.
4 cups flour.
5ml vanilla essence.
1 cup desiccated coconut.
6 tsp baking powder.
5ml ground cinnamon.
125ml smooth apricot jam.
pinch of salt.
castor sugar to sprinkle on top.
Cream butter and sugar well.
In a seperate bowl beat eggs and vanilla essence. Add to butter mixture.
Sift dry ingredients and add to mixture.
Add coconut and mix well.
Press 2thirds of mixture into a greased 200 x 330mm swiss roll baking tray.
Refrigerate the remaining 1third of the mixture.
Spread the apricot jam over the mixture in the tray.
Crumble the remaining 1third of the mixture over the jam.
Bake at 180°C for 30 min.
Cut into small squares and sprinkle lightly with castor sugar.
