Coconut Pudding Recipe

INGREDIENTS PUDDING

125g butter or margarine.
250ml white sugar.
250ml warm water.
3 eggs.
250ml flour.
15ml baking powder.
pinch of salt.
500ml coconut.

INGREDIENTS SYRUP

250ml white sugar.
250ml water.

DIRECTIONS PUDDING

Preheat oven to 180°C.
Grease a 25 x 18 x 3cm oven proof dish with margarine or butter.
In a bowl beat the butter, sugar, water and eggs together.
In a separate bowl sift the flour, baking powder and salt together.
Add the coconut and mix.
Mix the flour mixture into the butter mixture.
Pour the mixture into the prepared oven proof dish.
Bake for about 30 minutes until golden brown.

DIRECTIONS SAUCE

In a saucepan on the stove cook the water and sugar for 5 minutes.
Pour over the warm pudding as soon as it comes out the oven.
Cut into squares.
Serve warm or cold.
