Coconut Cookies Recipe

INGREDIENTS

150g butter or margarine.
250ml icing sugar, sifted.
pinch of salt.
10ml lemon rind.
3 egg whites.
1 extra-large egg.
400ml coconut.
450ml flour.
1 packet (100g) hazelnuts, finely chopped.

METHOD

Preheat oven to 200°C.
Spray 2 large baking trays with non-stick spray.
In a bowl cream the butter.
Add small quantities of icing sugar at a time, beating well after each addition.
Add the salt and lemon rind.
Mix.
Add the egg whites one at a time, beating well after each addition.
Add the whole egg.
Beat well.
Add the coconut, flour and hazelnuts.
Mix in well with a fork.
Spoon teaspoonfuls onto the prepared baking trays.
Bake for 10 minutes or until done and pale brown on top.
Cool slightly on the baking trays.
Place cookies on a wire rack and cool completely.
Store in an airtight container.
