Cherry Loaf Recipe


150g soft butter or margarine.
2½ cups cake flour.
2 teaspoons baking powder.
½ teaspoon salt.
160ml red glacé cherries, halved.
1 extra large egg, whisked.
1 teaspoon vanilla essence.
½ cup water.
1 tin condensed milk.


Preheat the oven to 180°C.
Butter a 26x10cm loaf tin.
Line the tin with baking paper and butter again.
In a bowl cream the butter until light and fluffy.
In a separate bowl sift the cake flour, baking powder and salt together.
Add the halved cherries.
Add the dry ingredients mixture to the butter mixture.
Add the whisked egg, vanilla essence, water and condensed milk.
Mix well.
Pour the batter into the prepared loaf tin and bake for 1 hour until golden brown,
or until a testing skewer inserted comes out clean.
Remove from oven.
Cool slightly in the tin and turn out onto a cooling rack and allow to cool completely.
