Cabbage Baskets Recipe

INGREDIENTS

6 fairly small cabbage leaves (use the inner leaves).
3-4 russian sausages, sliced into rings.
oil.
1 onion, coarsely chopped.
1 green pepper, seeded and diced.
2 tomatoes, skinned and diced.
250ml cooked pasta shells.
salt and black pepper to taste.
grated cheddar cheese for sprinkling on top.

STEPS

Preheat oven to 180°C.
Boil the cabbage leaves in a little salted water until just tender, but not broken.
Drain and line the hollows of muffin tins with the leaves.
In a pan fry the sausages in a little oil until lightly browned.
Remove from the pan and sauté the onion and green pepper in the same pan until tender.
Add the tomato and simmer until soft.
Add the sausages and the pasta and mix.
Turn the mixture into the cabbage baskets and sprinkle with grated cheese.
Heat in the oven until the cheese has melted and the dish is warmed through.
Serve with chutney or tomato sauce and bread rolls.
